Valencia’s signature comfort food, paella, gets a modern California twist at Michael Cardenas’ new Santa Monica restaurant, Taberna Arros y Vi.

At the new Santa Monica spot, chef Verite Mazzola pairs the dish’s traditional bomba rice and saffron-infused broth with just-picked produce and locally sourced proteins. Squid-ink pasta and lamb belly roulade stand out on the multi-regional Spanish menu, as does a tempting tapas selection, which includes crispy pig ears, spicy potato skins and fried tiny smelt. Also earning a following: a festive happy hour and inventive sangria and libations lists. In keeping with the earthy and colorful cuisine is the space’s leather- and antler-accented décor, which boasts original exposed brick walls, a copper bar, wine barrel bar tables from local Semler Wines and a main dining space featuring cozy denim banquettes.
